In order to serve an Italian potato soup as a delicious starter, you basically only need five ingredients.
The quantities refer to an Italian potato soup for two people.
If you are cooking just for yourself or for other family members or guests, add or subtract the ingredients by the appropriate factor.
2 cloves garlic
500 ml vegetable broth
250 grams of potatoes
25 grams of sun-dried tomatoes
25 grams of black olives
Olive oil, rosemary, pepper and salt should also be available so that you can bring the perfect ambience to your home with the delicious Italian potato soup.

The preparation of the Italian potato soup is very simple and only takes 30 minutes
First peel the garlic cloves, then chop them up and fry them in a little olive oil.
Heat the powder or cube with tap water to a vegetable broth and add the mixture.
Peel the potatoes and dice them.
The potatoes are then also placed in the saucepan and boiled for about 20 minutes until they are done.
Then puree the soup, for example with a hand blender or a blender.
If the Italian potato soup has not yet reached the desired consistency, you can add a little hot water.
