The classic is definitely the potato soup.

Hot and hearty - that's how it should taste.

Try this recipe.

Many swear by family recipes, others like modern interpretations: Potato soup recipes are really a dime a dozen.

There is no such thing as "one" potato soup.

And that's the nice thing about it: This recipe offers almost endless variations and thus many opportunities to get creative yourself.

Vegetables or instant broth?

In order to cook a potato soup, you need one thing in addition to all the ingredients: liquid.

Sure, the potatoes themselves don't give off enough of it.

And here comes the crucial question:

Buy ready-made

vegetable broth ,

cook your own vegetable broth

or the third variant: simply put

lots of vegetables in the pot

and pour in water!

The latter has the advantage that you don't use instant broth and you don't have to spend a lot of extra time cooking a vegetable broth.

maybe even a meat loaf

Everything is possible, everything is allowed.

You really have no limits here.

It is only important that you only add the sausages to the soup after pureeing.

Reheat the potato soup with the finely chopped sausages to add some flavor.

Ingredients for Potato Soup

  • 2.5 kg of potatoes

  • 2 carrots

  • 200 grams of celery

  • 1 leek

  • 3 cloves of garlic

  • 2 tablespoons clarified butter (alternatively sunflower oil)

  • 4 onions

  • 2 bay leaves

  • 2 liters of water

  • 0.5 tsp grated nutmeg

  • 1 small bunch of parsley

  • 1 small bunch of lovage

  • salt (for seasoning)

  • pepper (for seasoning)

  • chives (for garnish)

  • 2 pairs of Debrecians

  • 2 pairs of Cabanossi

  • 2 pairs of wieners

  • 200 grams of smoked bacon

How to prepare potato soup

  • Peel the potatoes, cut into small cubes and also cut the carrots and celery into small pieces.

    Cut the leek into fine rings.

  • Chop garlic and onions.

  • Heat the lard in the pan.

    Gradually add the onions, garlic, carrots, celery, leek and finally the potatoes and sauté.

  • Season with pepper, salt and nutmeg.

  • Add bay leaves, parsley and lovage.

    Now fill with water.

  • Add the smoked bacon in pieces.

  • Simmer gently - about 40 minutes, until the potatoes and vegetables are tender.

  • Take out the bay leaves and the smoked bacon and puree the soup with a 🛒 hand blender (promotional link).

  • Now cut the bacon into small pieces, cut the sausages into rings and stir everything back into the potato soup.

    Let it steep in it for about 15 minutes.

  • Finely chop the chives and garnish the soup with them.
