The secret of a cake's creaminess lies in its fat content.

With mascarpone, your cheesecake tastes as airy as grandma's.

Very good cake recipes are a dime a dozen.

Not quite as many, but very tasty variants of the classic cheesecake have to offer.

For example, there is the Israeli cheesecake, the Black Forest cheesecake or the cheesecake with a chocolate base.

If, on the other hand, you want to bake a classic cheesecake that doesn't taste crumbly or dry, but wonderfully juicy and creamy like grandma's, you should use the secret ingredient mascarpone.

Why is my cheesecake dry and crumbly instead of creamy?

Conventional quark has a high protein content but a low fat content - so the cheesecake loses its creaminess.

Therefore, replace part of the quark with mascarpone.

  • 75 grams of sugar

  • 75g margarine

  • 1/2 package baking powder

For the cheesecake filling:

  • 125g margarine

  • 225 grams of sugar

  • 1 packet of vanilla sugar

  • 3 eggs

  • 1 packet of vanilla pudding powder

  • 200 grams of cream

  • 500 g cottage cheese

  • 200g mascarpone

Since the fat content is what matters most in a creamy cheesecake like grandma's, you shouldn't use low-fat quark, otherwise your cake could become crumbly.

Preparation: This is how the creamy cheesecake succeeds like grandma made with the secret ingredient mascarpone

  • Preheat the oven to 180 degrees Celsius top/bottom heat (160 degrees Celsius fan oven).

  • Mix the ingredients for the base, i.e. flour, sugar, margarine, egg and baking powder, with a mixer to form a dough and set it aside.

  • In another bowl, mix margarine, sugar, vanilla sugar, eggs and custard powder for cheesecake filling.

  • Whip the cream until stiff.

  • Fold in the quark, mascarpone and whipped cream.

    But don't stir too hard or the fluffiness will be lost.

  • Grease the springform tin for baking and fill in the batter.

    Make sure that the edge is about two centimeters high.

  • Then the filling comes on the cake dough and the cheesecake is baked for about an hour.

  • If the baking time is coming to an end, the chopstick test will help.

    To avoid the top of your super creamy mascarpone cheesecake from getting too dark, you can cover it with aluminum foil.
