"The production, by our mills, of flour and semolina destined only for bread making, whether it be artisanal or industrial, amounts annually - explains Andrea Valente, president of Italmopa - to about 2.4 million tons, to which add about 250,000 tons. intended for bread substitutes ".

However, the impact of the cost of wheat on the price of bread is marginal, equal to about 10% on average.



According to Coldiretti, this is also demonstrated by the extreme variability of retail prices along the Peninsula: "a kilo of wheat is paid today to farmers around 36 cents and is used to produce a kilo of bread that is sold to consumers at prices that vary from 3 to 5 euros depending on the city ".



On the other hand, energy increases, which affect production costs, weigh on the white art supply chain.

"The wholesale prices of soft wheat flours are constantly increasing, have reached + 51% and + 45% in August and September, compared to the prices of a year ago", reports the president Fiesa Assopanificatori Confesercenti, Davide Trombini, who takes the opportunity of this day "to make a strong appeal to all political forces and to the future government, so that they can get out of the buffer measures to combat expensive energy".
