These dreamy chocolate cookies don't need a drop of flour.
They are fudgy, soft and juicy, but notice the added benefit - they don't even need a pinch of sugar.
I put this recipe together from several recipes, but during the preparation, the hustle and bustle of the children around made me forget the sugar.
When the cookies were baked in the oven, I saw in my mind's eye with great horror, how I would throw them in the trash with shame and lack of public interest, but the cookies came out so delicious and soft that I had to protect them until Afik finished taking pictures.
And here is the end of a mistake with great joy - meaning: don't be afraid to bake, make mistakes and try to understand what is hidden behind the cream, the cake or the cookies - who knows, maybe you will sign one of the great inventions.
Tips and nuances before starting:

Cream of tartar,
which is in the list of ingredients in the recipe, is a byproduct of the wine industry that is used as a stabilizer in baking.
It can be found as a white powder next to the leavening powders in specialty stores.
Want to convert it into baking powder?
Remove it and the baking soda from the ingredients and replace with a teaspoon of baking powder.
*For those of you who still prefer a little sweetness in the cookies, you can add 1/2 cup of powdered sugar at the stage of adding the cocoa and coffee (you have to mix them together first).

Chocolate cookies without flour and without sugar
Ingredients
400 grams dark chocolate
6 tablespoons of vegetable oil
½ cup fine cocoa powder
2 teaspoons instant coffee
½ teaspoon vanilla extract
4 eggs L
½ teaspoon cream of tartar (if you want to convert with another ingredient, please see the introduction to the recipe)
¼ as baking soda
¼ teaspoon of salt

Preparation
How to make a recipe: Addictive chocolate cookies without flour and without sugar?
1 Melt the chocolate and oil in the microwave in 20 second pulses until completely melted and the fats combined into a shiny and smooth mass.
Set aside to cool for at least 5 minutes.
2 Add the cocoa powder, coffee powder and vanilla extract and mix well.
3. Gradually add the eggs and whisk quickly until they are fully incorporated.
4 Add the rest of the powders and salt and mix well.
5 Using a large spoon, pinch cookies and place them on a baking sheet lined with baking paper, pressing down a little.
A distance of 1-2 cm must be maintained so that the cookies do not stick, even though they expand very slightly.
6 Bake in an oven preheated to 180 degrees for about 9 minutes.
Pay close attention and monitor during baking that the cookies do not burn since there is no indication of color.
The correct signs are: the cookies have swollen and expanded a little and formed slight cracks in the middle, also a strong cocoa aroma envelops the house.
It is even better to spend ahead of time if you are not sure.
7 Cool in the pan for at least 15 minutes in the open air/in front of a window.
Then very gently remove from the baking paper with a peeling motion.
Transfer to a cooling rack for another quarter of an hour.
The cookies keep well in an airtight glass container for about 5 days.
* You can sprinkle a little melted white chocolate on top or combine with vanilla ice cream or any other flavor you like.
