If life turns you down, go collect (edible) chestnuts
i love autumn
It's not just the fact that my birthday is in this time of year that makes this quarter special for me, but also the landscape.
I like the brightly colored leaves on the trees and even when they are lying on the ground they do not lose their charm.
Let's be honest, whether you're a child or an adult, who doesn't enjoy walking through leaves that have been blown together?
Appropriately, I recently stumbled across this saying: The reflex to pick up chestnuts is not lost even in old age.
I had to think first, then smile and finally agree.
Yes, even when I'm over 30, I still take chestnuts home with me if I find any.
Why?
Legitimate question: I no longer make chestnut men and I'm not the big decoration queen either.
Most of the time they end up in the bin.
But no matter: they gave me a lot of pleasure collecting them, reminded me of my childhood and last but not least, collecting chestnuts is crowned with greater success than looking for mushrooms in the forest.
And because I want to share this joy with you, I brought you a recipe for chestnut cream soup today (although you probably won't be able to use the chestnuts you've collected).
That's how it's done:
You only need a few ingredients:
Chestnut Cream Soup:
100 grams of butter
150 g onions, diced
1 garlic clove, chopped
400 g chestnuts, boiled and diced
1 tsp thyme, chopped
750 ml vegetable stock
350 ml cream
1.5 tsp salt
1 tsp pepper
Topping:
1 tbsp cooking oil
100 g chestnuts, cooked and sliced
thyme, to taste
This is how quickly you prepare the soup:
For the chestnut cream soup: Melt the
butter in a saucepan.
Sauté the onion and garlic in it until translucent.
Add the chestnuts and thyme and fry briefly.
Deglaze with vegetable stock and whipped cream.
salt and pepper.
Cover and simmer for 20 minutes.
Finely puree with a hand blender and set aside.
For the topping:
Fry the chestnuts in a pan with cooking oil until they get a nice brown colour.
Remove and drain on some kitchen paper.
Divide the chestnut cream soup into bowls and serve sprinkled with topping and thyme.

The difference between horse chestnuts and chestnuts
The horse chestnuts described at the beginning, which people like to collect in autumn in this country, are of course not edible.
Luckily, they have delicious relatives who are perfect for our delicious soup recipe.

The popular chestnuts are a special breed of sweet chestnuts.
They taste
sweet and nutty
and can be used in various autumnal dishes.
Unfortunately, they don't grow that often here, but if you do find them, pay attention to the shape of the nut.
Chestnuts are rather
flat and pointed

heart-shaped
.
They also have a
small, brush-like tail
at the tip .
