The pinnacle of Italian cuisine: risotto
I personally think that risotto is a very special dish.
Risotto shows how simple and yet special and refined Italian cuisine is.
The main task, and at the same time the step where the most difficulties arise, is to stir in the liquid correctly.
A perfect risotto should never be soggy, but nice and al dente like pasta.
Also called “
all'onda
” for risotto.
Onda means wave and that's why the risotto is ready when stirring
the saucepan creates a wave
.
But be careful: the
risotto rice always draws
, so it's better to take the risotto off the stove earlier than too late.

Here are the most important hacks for preparing risotto:
Please do not wash the risotto rice beforehand
.
The
starch
that coats the rice grain will ensure that the remaining ingredients and the sauce are bound.
With the Parmesan and butter, which should always be added to the dish, this gives the
creamy consistency
of a risotto.
Briefly fry the risotto rice

As a result, the risotto rice absorbs light
roasted aromas
before cooking .
Additionally, onions and garlic can be added at this step to allow those flavors to be absorbed into the rice as well.
In addition, the
rice starch is bound
and it is ensured that the
grains do not stick to each other

Raise the temperature briefly when deglazing with white wine

The wine should therefore be boiled down while it is bubbling, so that no bitter aromas form.
Then you can reduce the temperature again and the broth will be added.
You should add the broth ladleful at a time

Make sure the rice is always just covered with liquid.
Once that's gone, add another ladleful of
hot
broth.

For our creamy curry chicken risotto you need these ingredients:
50 ml sunflower oil
350 g chicken breast, cut into 2 cm pieces
400 g risotto rice
150 g onion, diced
1 garlic clove, chopped
3 tbsp curry paste
150 ml white wine
500 g coconut milk
1.5 l chicken broth
300g cauliflower, cut into halved florets
100 grams of butter
100 g parmesan, grated
coriander to taste
The preparation is so easy:
Heat sunflower oil in a saucepan.
Sear the chicken breast on all sides until lightly browned.
Take out and set aside.
Put the risotto rice in the pot and sauté.
Stir in the onion and garlic and sauté briefly.
Add curry paste, white wine and coconut milk.
Let the risotto rice and the liquids simmer gently, stirring constantly, until the risotto rice has been soaked.
Gradually add chicken broth.
In between, keep waiting until some of the liquid has evaporated or the rice has absorbed the liquid.
Always make sure that the rice is just covered with liquid.
If it doesn't, add another ladleful of the broth.
First add the cauliflower, stir in and then add the chicken breast.
Refine with butter and approx. 70 g of Parmesan.
Serve in deep plates and garnish with the remaining parmesan and coriander to taste.
