Easy kale vegetable meatballs
Ingredients
2 zucchini
4 carrots
3 potatoes
1 onion
A handful of chopped parsley
2 eggs
½ loaf of bread (half of the amount can be converted to thin oats)
½ teaspoon of salt
½ teaspoon seasoning for meatballs (or ras al chantan)
A pinch of black pepper

How do you make vegetable meatballs?
1 Peel the vegetables and grate on a grater into a bowl.
You can use a food processor with a suitable blade for shredding.
2 Squeeze the vegetables well and get rid of unnecessary liquids.
3 Add the rest of the ingredients and mix.
4 Make circles from the mixture and fry in oil.

For baked meatballs:
place the meatballs on greased baking paper, spray or brush each meatball with oil and place in an oven preheated to 180 degrees for 30 minutes.
Turn the meatballs on their side and leave another 10-15 until golden.

Variety:
you can use or add to the mixture different vegetables such as sweet potato, cauliflower, broccoli, kohlrabi, garden peas or corn.
