8 quinces
200 g candy sugar
40 grams of butter
4 vanilla beans

Wash the quince, grate the peel and use a pastry cutter to remove the rind.
If you don't have an apple corer, you can also use a pointed, sharp knife.
Stud the outside of the quinces with the rock candy and fill the inside with 1 teaspoon butter, 1 tablespoon rock candy and half a sliced vanilla bean per quince.
Wrap each quince in aluminum foil, place the fruit on a baking tray and roast the quinces at 160 degrees Celsius top/bottom heat (convection oven 140 degrees Celsius) for about 70 minutes.
You can tell whether the roasted quince is done by the fact that the flesh is roasted until soft – test with a stick.
Roast quinces taste best hot.
You can serve the fruit with custard or vanilla ice cream.
Cranberry compote also goes well with it.

Just like with baked apples, there are numerous ways to fill the fruit with roasted quinces during the Advent season.
One variant is, for example, with slivers of almonds, honey and dates.
You can also replace the almond slivers with walnuts and the dates with figs, cranberries or raisins.

An alternative would be a mixture of almond butter and quark.
