The strombelli, for those who don't know, is a simple and easy pizza bakery that reminds a little of the calzone and got its name from the Italian volcano.

Imagine a hot pizza dough roll that comes out of the oven with tomato sauce and warm, stretchy mozzarella cheese inside with a bunch of toppings.

just today uploaded the video to her TikTok page for her amazing recipe for strombelli made from buckwheat flour and yeast.



It closes a corner for a family dinner and is perfect for snacking in front of the World Cup games.

Immediately prepare the stromboli dough before the start of the game, let it rise until the beginning of the half, fill and pop in the oven for 20 minutes, just in time for the exciting part.

Ingredients

  • For the dough:

    • ½ cup spelled yeast flour + 4 tablespoons (250 grams)

    • 1 teaspoon of sugar

    • 1 tablespoon ground salt

    • ⅔ cold buckwheat + 1 tablespoon (170 ml)

    • 1 tablespoon olive oil

  • To fill:

    • 300 grams of grated mozzarella

    • ½ bunches of basil

    • 10-15 small halved cherry tomatoes

    • 1 handful of Kalamata (optional)

    • From garlic powder

    • Salt

    • black pepper

    • Olive oil

Preparation

How do you make stromboli - pizza dough?

  • 1 Put all the dough ingredients in a mixer bowl with a kneading hook for about 8 minutes until you get a uniform and slightly sticky dough.

    Transfer to a greased bowl, cover and let rise for about 45 minutes.

  • 2 Heat an oven to 250 degrees and line an oven tray with baking paper.

  • 3 Roll out the dough on a floured work surface into a large rectangle 2-3 mm thick. Sprinkle the cheese, basil leaves, tomatoes and, if desired, the olives on top. Season and roll into a tight roll.

  • 4 Transfer the roulade to the mold with the seam facing down.

    Fold the edges inward and brush with olive oil.

    Using a sharp knife, make 4-5 diagonal cuts in the upper part of the roll.

  • 5 Bake for 20-25 minutes until the pastry is crispy and brown.

    Serve immediately.
