Angel eyes, hussar donuts or googly eyes?

You know those little balls of dough with jam, don't you?

They are among the absolute favorites of Christmas baking and are actually not missing in any cookie jar or on the plate.

But although so well-known and popular, there was simply no consensus on the naming.

Depending on the region, the nut cookies are sometimes called angel eyes, googly eyes, hussar donuts or "cookies with jam in the middle".

At home they are called hussar donuts.

Personally, I think that's a good thing, because I imagine angel eyes being light blue and innocent rather than blood red...

That's how it's done:

You only need a few ingredients:

  • Dough:

  • 200 grams of flour

  • 100 g hazelnuts, ground

  • 150 grams of sugar

  • 1 packet of vanilla sugar

  • 1 pinch of salt 

  • 2 egg yolks

  • 150 grams of butter 

  • Besides that:

  • 150 g redcurrant jelly

  • 2 tbsp powdered sugar

The preparation is simple:

  • Sift flour into a bowl.

    Add the remaining dry ingredients (hazelnuts, sugar, vanilla sugar, salt) and mix.

  • Add the egg yolks and butter and knead with your hands to form a homogeneous dough.

    Shape the dough into a rectangle and refrigerate for at least 1 hour.

  • Cut the dough into cubes of equal size (about 40 pieces) and shape each cube into a ball.

    Place balls spaced apart on a baking sheet lined with parchment paper.

  • Using the handle of a wooden spoon, make indentations in the balls.

    If the dough sticks to the wooden spoon, dip it in some flour.

  • Bake in a preheated oven at 180°C for about 12 minutes.

  • Allow the angel eyes to cool completely and then dust with powdered sugar.

  • Heat the blackcurrant jelly (microwave or saucepan) and fill into a piping bag.

    Fill angel eyes with currant jelly.

    Which jam is the best?

    The currant has quite a bit on the box.

    It is healthy and tastes great in many ways, not just as jam.

    Our recipe uses the classic red currant jelly.

    It's not too sweet, slightly sour and doesn't have any annoying seeds.

    In addition, the acid keeps the sweetness of the crumbly biscuits well balanced.

    But of course, as always, whatever tastes good is allowed.

    So try your hand at the range of jams and jellies and vary your angel eyes with raspberry, quince or apricot jam.
