(ANSA) - VENICE - According to the experts of the Italian Espresso Institute, Rovigo is the city where you can drink the best cup of coffee in the country.
Precisely at the "Baribal" bar, managed by Nico Bregolin, who won the competition for baristas, the Espresso Italiano Champion 2022, held in Milan.
Bregolin, 43 years old, at the helm of his restaurant for 19 years, was awarded the title of best professional in terms of espresso and cappuccino.
The competition was held in Piazza Duomo, in Saporè.
In just 11 minutes Bregolin managed to calibrate his equipment (an Evo 2 machine and a coffee grinder) preparing four espressos and four cappuccinos, which were then evaluated by a pair of technical judges and a panel of sensory judges.
The tasting took place blindly, without anyone knowing who owned the cups on the table.
The competing products - was the final judgment - reflected the quality parameters of the Italian Espresso Institute (IEI): for the espresso, a cup with about 25 milliliters of coffee adorned with a thick and very finely textured, hazelnut-colored cream ,
syrupy with intense aromas and rich notes of flowers, fruit, chocolate and toasted bread.
For the cappuccino an equally fine and glossy cream, with a perfect balance of milk and coffee aromas.
"After three years of forced break we are back with our competition between baristas, born to enhance a fundamental profession for Italian hospitality - said the president of IEI, Luigi Morello - Italian espresso and cappuccino despite globalization remain the symbol of Italian spirit and our mission is to enhance both the quality in the cup and those who work behind the counter every day to obtain it".
