Carrots can be stored in the refrigerator for about a week, up to a week and a half if you wrap the carrots in a damp kitchen towel and store them in the vegetable compartment.
After that they shrivel or rot.
But there are several ways to preserve carrots for several years.
You should know the following methods:
Freeze carrots
Process carrots into soup
Process the carrots into a salad and preserve them
As
Foodwissen
reports, carrots can be frozen.
It is ideal if you peel the carrots beforehand and cut them into sticks so that you can defrost the carrots in portions.

Grated carrots are mixed together with apple juice, honey, lemon juice and a little olive oil and left to cool overnight so that liquid forms.
Then pour the salad into clean jars, clean the rims of the jars and close tightly with the lids.
Cook for half an hour at 100 degrees Celsius in a preserving machine or pot.
