The young starred chef Julia Sedefjian designed and prepared the meal for just over 2,000 students from Paris-8 University in Saint-Denis, this Tuesday for lunch.
A first for a university restaurant in France, and a treat for students.
Contacted this summer by the University of Paris-8, the 27-year-old chef agreed to take up "the challenge": to design and cook a healthy meal with a limited budget for students who eat at the Crous in Saint-Denis.
In this university restaurant, the meal – starter, main course and dessert – costs 3.30 euros and one euro for scholarship holders.
To stay within the Crous budget, the youngest starred chef in France decided to prepare two dishes: a fish accompanied by rice and a vegetarian dish with sweet potato.
Dishes that delighted the taste buds of most of the students we met there.
"This canteen is generally good, but it's true that today we feel that it's more worked," said Serge, a student at Paris-8.
Martina is impressed by the vegetarian dish she has chosen.

“I had taken salt and pepper, but I wouldn't need it!

In the long term, the initiative launched by the Crous de Créteil is intended to be reproduced "elsewhere and by other chefs!"
