At Christmas, tradition is not touched: despite inflation, 8 out of 10 Italians do not want to give up fish-based dishes, the protagonist of the tables, which is fresh but also in a frozen version.
This was highlighted by IIas - Istituto Italiano Alimenti Surgelati, in collaboration with the food blogger Germana Brusca (Mamma Gy) who created a menu for the "lean" dinner on Christmas Eve, with 3 recipes entirely based on frozen fish products, to taste traditional dishes, in an innovative, simple, fast and cheap way.
They range from the appetizer, served with cod croquettes, potatoes and parsley, to the first course of ravioli filled with fish, with a saffron and dill sauce, to conclude with a second course of salmon crusted with pistachios and potatoes.
After all, IIas recalls that the domestic consumption of frozen fish products recorded a growth of 2%, reaching 113,300 tons.
It's not difficult to understand why it receives such acclaim: it's good, it's good for you, it allows you to save money, it allows you to cook the portion you count on eating, avoiding waste, with the same organoleptic and nutritional characteristics as the fresh product.
"They are products that have been appreciated by consumers because they are safe, healthy, nutritious and always available, thanks to their advantages - explains the president of IIas Giorgio Donegani - from certifications on the origin of the raw materials which also guarantee the eco-compatibility of fishing to the completeness information guaranteed on the label, up to the ease of preparation".
