It's also not new information for vegans that applesauce can be substituted for egg or vegetable oil can be substituted for butter.
Can't imagine that the result will work?
Then try out a cookie recipe with the following alternatives to sugar and egg:
Flour
can be replaced with ground hazelnuts or ground almonds.
Simply use as much alternative product to replace the flour as indicated in the recipe.

sugar

Powdered sugar, honey or maple syrup also serve the purpose of making the cookie dough sweet.
Simply replace the sugar 1:1.
Butter

If you suddenly feel like baking cookies, you can alternatively use margarine in a ratio of 1:1 or 80 to 85 grams of oil for 100 grams of butter.
No
eggs
in the house?

If the cookie recipe calls for
baking powder
but you don't have any at home, just use flour and baking soda.
According to ZDFinfo, the dough also rises without baking powder in a mixing ratio of five grams of baking soda to 100 grams of flour with a dash of vinegar or lemon juice.
