This recipe fills you up: hand bread with ham and cheese, just like from the Christmas market.

I put my hand in the fire for this recipe.

In addition to mulled wine, Baumstriezel and cabbage Schupfnudeln, hand bread is one of my absolute favorites when visiting a Christmas market.

Classically filled with bacon and cheese and a dollop of sour cream - wonderful 🤩!


Since the time of the Christmas markets is unfortunately limited and the next festival is not around the corner either, we simply make the delicious hand bread ourselves 🙌.

That's how it's done:

You need these ingredients:

  • Dough:

  • 350 g flour (type 550) 

  • 200 g whole wheat flour

  • 0.5 cubes (approx. 21 g) fresh yeast 

  • 1 pinch of sugar

  • 350 ml water, lukewarm

  • 12 grams of salt

  • Hand bread filling:

  • 250 g cheese, grated

  • 150 g diced ham

  • Topping:

  • 200 g crème fraîche

  • 0.5 tsp salt

  • 0.5 tsp pepper

  • 1 tsp sugar

  • Chives, in rolls

The preparation is simple:

  • For the dough:

    Mix both flours together in a bowl.

    Make a well in the flour and crumble in the yeast.

    Mix yeast with sugar and 50 ml lukewarm water and leave to rest for 15 minutes.


    Then add the remaining water and salt and knead everything into a homogeneous dough.

    Cover the dough and let it rest in a warm place for at least 1 hour until it has increased significantly.

  • For the topping:

    mix together the crème fraîche, salt, pepper and sugar and set aside.

    Wash the chives, shake dry and set aside.

  • Preheat the oven to 200°C for a circulating air.

  • For the hand bread: Roll out the

    dough on a lightly floured work surface into a large rectangle.

    Place one-third of the cheese and diced ham on the right-hand third of the rectangle.

    Leave a 10 cm border free.

    Fold the edge over the filling and press lightly.

    Sprinkle the fold with ham and cheese and fold again.

    Repeat again until the dough is completely rolled up.

    Fold over the ends and press firmly.

  • Depending on the size of your baking sheet, place the rolling pin on a baking sheet lined with parchment paper, either whole or cut in half.

    Using the back of a knife, cut the dough roll into pieces of any size, but do not cut through.

  • Bake for about 20 minutes until the crust is cooked through and light brown on the underside.

    Divide the hand bread into pieces and serve sprinkled with a dollop of cream and chives.

  • Clean up!
