Every once in a while the web is stormy and excited because of a recipe that manages to sweep countless hungry surfers after it.
Almost two years ago, this was the famous recipe for pasta with feta cheese sauce and cherry tomatoes, which we also tried and fell in love with.
The trick is simple
- put cherry tomatoes in the oven with a nice cube of feta cheese and roast until the tomatoes and cheese soften and burn a little, mix together and you get a rich and wonderful sauce.

Ingredients
For rice:
1 teaspoon olive oil
1 cup Persian rice
2 cups of boiling water
a little salt
For the roasted tomato sauce and feta cheese:
30 cherry tomatoes
200 grams feta cheese
3 tablespoons of olive oil
2 crushed garlic cloves
½ teaspoon of salt
¼ teaspoon ground black pepper
Kurtchbabi chili (optional)
½ cup dried oregano
1 handful of chopped fresh herbs, according to what you like (basil leaves/parsley/coriander/dill)

Preparation
How do you make rice with feta and roasted cherry tomatoes?

Prepare the rice:
heat the oil in a pot, add the rice, mix and fry for about a minute while stirring.
Add the boiling water and salt, mix, lower the flame and cook covered for about 15 minutes, or until all the water is absorbed, and the rice softens.
Remove from heat and leave covered for another 10 minutes.
2 In the meantime, heat the oven to 200 degrees.

And now for the sauce:
sprinkle the cherry tomatoes in a Pyrex dish, pour the olive oil over it, add the garlic, salt, pepper, chili chips and oregano and mix well.
4 Place the cube of feta in the center of the pan and place in the hot oven for 20-25 minutes until the tomatoes are completely soft and lightly charred.
5 Remove the pan from the oven and mash the tomatoes with the cheese with a fork into a thick sauce.
6 Add the cooked rice, mix well, sprinkle herbs according to personal taste and serve immediately.
