Although there is still some time until Hanukkah reaches us, we don't really need a holiday to enjoy these perfect pancakes.
Here is a quick and easy recipe for classic potato fritters (Roshti), you have until Hanukkah to practice.

Ingredients
3 large potatoes, peeled (red skin)
½ white onion
A spoonful of flour
1 egg
Salt to taste
White pepper to taste
1 cup oil for frying

Preparation
How do you make classic potato fritters?
1 Grate the potatoes lengthwise, using a coarse grater, into long strips.
2 Grate the onion on the same grater.
3 Squeeze the potatoes and onions well, with your hands, so that no liquid remains.
Transfer to a dry bowl.
4 Add the egg, flour, salt and pepper to the mixture and mix well.
5 Heat oil in a medium deep pan.
Take a spoonful of the mixture and lower it into the oil with a fork
6 Fry on both sides until golden, take out and place on a plate with absorbent paper.
7 To serve
:
serve alongside sour cream, smoked salmon, or anything else you like.
