Delicious eggnog without eggs: You need the following ingredients for the vegan recipe

Preparation time:

5 minutes + at least 1-2 hours soaking time + possibly 1-2 hours cooling time

Servings:

4 cups

  • 75 g raw cashew nuts


  • 400 ml coconut milk (1 can)


  • approx. 100 ml water (or until desired creaminess)

  • 3 tbsp maple syrup (or date syrup or other sweetener; to taste)

  • ½ tsp vanilla extract


  • 1 pinch ground cinnamon + more for sprinkling

  • 1 pinch grated nutmeg

If you want, you can garnish the homemade, vegan eggnog with star anise and pomegranate seeds.

The preparation of the vegan eggnog is very simple

  • Soak the cashews for at least 1-2 hours or overnight to soften (or just cook for 10 minutes if you want a quick one).

    Then rinse and let drain.

  • Place all ingredients in a blender and blend until creamy.

    Taste and add more spices or sweetness if needed.

  • Chill in the fridge for 1-2 hours before serving (optional).

  • Sprinkle with some cinnamon and garnish with star anise and pomegranate seeds, if you like.

    Then serve and enjoy.

  • If you seal the homemade, vegan eggnog tightly in a jar or bottle, it will keep in the fridge for about a week.
