Ingredients

    • 2 whole chicken breasts, divided into 4 lobes

    • 1 tablespoon paprika

    • ½ teaspoon cumin

    • ¼ olive oil

    • 1 basket of whole cherry tomatoes

    • 1 onion cut into eighths

    • 5 sliced ​​garlic cloves

    • 2 chopped celery stalks

    • 3 carrots cut into juliennes

    • 1 coconut sour cream

    • ¼ cup soy sauce

    • ½ cup

    • 1 teaspoon of salt

    • 1 teaspoon ground black pepper

    • ½ coriander

    • 3-4 sprigs of thyme

Preparation

How to prepare chicken breast with coconut cream and cherry tomatoes?

  • 1 Wrap the chicken breast in paprika and cumin.

    In a wide pan or saute pot, heat the olive oil and sear the seasoned chicken breast for about 6 minutes on each side, until browned.

  • 2 Add the tomatoes, garlic, celery and onion to the pan, mix and sear together for 2-3 minutes.

  • 3 Scatter around the carrots and pour the soy, coconut cream and water.

  • 4 Season with salt and pepper and bring to a boil.

    Transfer to a low heat, add cilantro and thyme and cook partially covered until the liquid is reduced, about 20-25 minutes.

    Serve with green onions.
