On New Year's Eve there is either raclette or fondue - that's what an unwritten law says.

That's how it's done:
You need the following ingredients:
Cocktail sauce:
150 grams of mayonnaise
100 grams of ketchup
0.5 tsp salt
1 pinch cayenne pepper
1 splash of Worcestershire sauce
1 tablespoon cognac
2 tbsp whipped cream
Devil's Sauce:
200 grams of ketchup
50 g green peppers, diced
50 g onions, diced
50 g gherkins, diced
8 g chili pepper, finely chopped
1 splash of Worcestershire sauce
1 pinch cayenne pepper
Mango Curry Sauce:
200 g mango, pureed
100 g crème fraîche
80 g onion, diced
20 grams of honey
1 tsp salt
0.5 tsp lemon juice
2 tbsp curry powder
The preparation is simple:
For the cocktail sauce:
Mix together the mayonnaise, ketchup, salt, cayenne pepper, Worcestershire sauce, cognac and whipped cream.
Decant the sauce and set aside.
For the devil's sauce:
Mix the ketchup with the peppers, onions, pickles and chopped chili.
Season to taste with Worcestershire sauce and cayenne pepper.
Decant the sauce and set aside.
For the mango curry sauce:
Mix together the mashed mango, crème fraîche, onions, honey, salt, lemon juice and curry powder.
Decant the sauce and set aside.
The sauces go perfectly with your meat fondue or bread.
So delicious!
