After we became professional and perfected with barbecues and upgraded with smoking, now it's the turn of the taboons - and rightly so, because with all due respect to the meat, there is nothing like a hot pizza that has just come out of the hot taboon.

The ovens, which were once the property of restaurants and chefs only, have become more and more accessible in the last two years, and today you can find a wide variety of ovens in the market in different sizes and in varying price ranges.



We received for testing a new player in the local market - a portable gas stove by the Peerless company, "Peerless NAPOLI 12" which is manufactured in China and marketed in Israel by the chain of electrical stores Olam Cinema. The model tested is the 12-inch model, a small model that weighs 10 kg and measures 62/40 /30 cm, has folding legs and a drop stone that can be removed if necessary and cleaned.



The relatively low weight and compact size of the oven allow it to be placed anywhere.

You really don't need a large garden or yard, a balcony and a raised surface such as a table or even a 70 cm wide shelf are enough to set it up. Also, thanks to its dimensions and the ability to fold its legs, it is very easy to carry and suitable for camping or picnics, for those looking for a tabon It can also be used in the field. What's more, please note - its small size requires the preparation of relatively small double-sized pizzas, and no more.

The stove does not come with a gas connection pipe, but after we purchased a pipe and connected the gas cylinder to the stove, it was very simple and easy to operate.

The tabon is easily turned on by turning the switch on the back.

The switch ignites with an automatic igniter the burner located at its innermost end, providing a powerful blue flame.



By turning the switch you can determine the intensity of the heat.

The instructions say that within ten minutes the tabon is ready for operation.

In practice, Tabun does not have a thermometer so it is difficult to know if you do not have a dedicated thermometer.

After 15-20 minutes you can say with certainty that the oven was ready to put pizzas in.

We discovered that the maximum flame intensity is too strong and may burn the pizza, therefore it is recommended to use the most powerful flame only for quick heating of the tabon, and to lower the flame height before inserting the pizza.



The oven has double sides that trap the heat inside and isolate it from the surface.

The heat in the oven comes from the back only and therefore, as in similar Tabuns, the pizza must be rotated during baking as needed.



Before we could blink we already had a delicious and wonderful pizza ready, with a great crispy dough.

It is only important to note that if you have not previously tried making pizzas in Tabun, as in any Tabun, trial and error is necessary until you get the perfect pizza.

Not to blame the crooked floor or the oven in our case - a slight skill and knowledge of the oven is required before you get a good pizza, but it is acquired quickly.



Another and very significant point in the case of the Pearls tabon is the price - 599 shekels, and 1,199 for the 16-inch tabon.

This is a ridiculous expense compared to ovens with exactly the same characteristics from competing companies, whose price is double or even three times greater than that of Pirles.
