This recipe for housewife-style matjes is a real classic in North German cuisine.

The ideal hangover breakfast on New Year's.
During my training period, there were one or two mornings when you came to work not quite fit after a night of drinking.
Luckily there was a fish department at my workplace that had the perfect hangover breakfast ready in the true Fischer:in tradition: housewife-style matjes.
And if you think that's not for you, then you've never had a juicy one , salty matjes with a sweet, creamy sauce after a night of partying.
By the way, it was also a custom to eat a Rollmops.
For the really brave gourmets there was a fresh oyster for breakfast.
It works wonders.

That's how it's done:
You need these ingredients:
200 grams of yoghurt
50 grams of mayonnaise
20 grams of mustard
200 ml whipped cream
0.5 tsp pepper
1 tsp salt
2 tsp sugar
100 g gherkins, cut into strips
70 g onion, in strips (equivalent to a small onion)
100 g apple, cut into strips
300 g pickled herring fillets
parsley, chopped
The preparation is very easy:
Mix the yoghurt in a bowl with the mayonnaise, mustard, whipped cream and the spices pepper, salt and sugar.
Add the gherkins, onion, apple and herring and stir gently.
Garnish with parsley to taste.
Et voilà!
