Ingredients

    • 200 g dark chocolate 70% cocoa solids

    • 100 grams of milk chocolate

    • 160 grams of butter

    • 7 eggs

    • Pinch of salt

    • 200 grams of sugar (cup)

  • For coating (optional):

    • 50 grams milk chocolate

    • 50 grams dark chocolate

    • 50 grams of sweet cream (about a quarter of a cup)

  • For chocolate twill (optional):

    • 100 grams of melted butter

    • 100 grams powdered sugar

    • 80 grams of flour (half a cup + tablespoon)

    • 20 grams of cocoa powder (2 tablespoons)

    • 100 grams egg yolks (3-4 pcs)

Preparation

How do you make a nemesis cake?

  • 1 Heat an oven to 160 degrees and place a pan with water at the bottom, in order to create steam in the space.

  • 2 Melt the chocolates and butter together in the microwave.

    Mix and set aside.

  • 3 Beat the eggs at high speed with a pinch of salt and start adding the sugar gradually.

    Whip for about 8 minutes until you get a thick foam.

  • 4 Using a whisk, fold the chocolate mixture into the egg mixture.

    Mix with folding movements until a uniform mixture is obtained.

  • 5 Pour the mixture into a 28/26 cm diameter pan lined with baking paper, flatten and bake for 50 minutes. The cake will not look completely ready, that's okay. Transfer to the refrigerator overnight to set.

    The cake can be served as is or with cocoa powder on top or with chocolate cream and cocoa twill

    How to prepare the chocolate coating:

    Roughly chop the chocolates and place in a bowl.

    Heat the cream in the microwave until it boils (just before) and pour over the chocolate.

    Wait a moment and mix well to a smooth cream.

    Pour over the cake.

    How to prepare the twill:

    mix the melted butter, powdered sugar, flour and cocoa.

    Add the egg yolks and mix well until you get a smooth paste texture.

    Put in the fridge for at least an hour.

  • 9 Heat the oven to 180 degrees.

    Spread the mixture on a silicon surface or greased baking paper and bake for about 10 minutes until it changes color.

    Take out, shape into the desired shape while the twill is still warm.

    Decorate the cake and serve (if there are any leftovers, you can store them in a sealed box).
