Replacing all this waste with washable materials: "It's a world first on this scale in an entire country", explains Benjamin Peri, co-founder of the Pyxo company, which advises restaurants on the best ways to adapt to these ecological challenges.
"Reusing requires structurally rethinking how fast food works," he says.

"Going from a model designed around everything disposable to a model that asks them to reuse washable dishes is really a revolution", sums up Moira Tourneur, Manager in the association Zéro Waste France.
