In France there is a particularly nice tradition for the day of honor: the Epiphany cake "La galette des rois".

The three kings, who followed the star of Bethlehem to bring gifts to baby Jesus, are honored annually around the world on January 6th.

In France, on the occasion of Epiphany, there is a beautiful culinary tradition in which a king is chosen by lot in the family.

With the help of the Epiphany cake "La galette des rois" made of puff pastry with marzipan filling, the so-called "bean" king is determined in northern France.

In the south, on the other hand, the tradition of the "Couronne" or the "Gâteau des Rois" made of brioche dough filled with candied fruit has prevailed.

You need the following ingredients for the original Epiphany cake "La galette des rois" from France

  • 2 puff pastries

  • 140 g ground almonds

  • 100 grams of sugar

  • 2 eggs

  • 75 grams of butter

  • 1 egg yolk

For the French Epiphany cake "La galette des rois" you also need a tart tin, a porcelain figurine (alternatively a bean) and a pastry brush.

How to prepare the French Epiphany cake "La galette des rois" according to the original recipe

  • Roll out the puff pastry in the tart pan and prick the pastry with a fork.

  • In a bowl, mix the ground almonds with the sugar, eggs and butter until smooth and pour into the tart pan.

  • Hide the porcelain figure or the bean in the cake dough and then cover it with the second puff pastry.

    Press the edges firmly.

  • Use a knife to draw the typical "La galette des rois" pattern on the top of the puff pastry and then brush it with the egg yolk using a pastry brush.

  • Bake the French Epiphany cake “La galette des rois” for about 25 minutes at 200 degrees Celsius top/bottom heat (180 degrees Celsius fan oven).
