In January, many people face the so-called
Veganuary Challenge
.
The term is a combination of vegan and January and was created by a global organization.
She encourages people to eat a plant-based diet for a month in January
and
to
create
awareness for the vegan diet.
Maybe you're there too and are now as happy as a (vegan) schnitzel about this delicious recipe for a simple celery schnitzel with a refreshing pea dip.
That's how it's done:
You need these ingredients:
Pea Dip:
250 g frozen peas
5 grams of parsley
5 grams of mint
2 tbsp lemon juice
2 tbsp olive oil
3 tablespoons soy yoghurt
0.5 tsp salt
0.5 tsp pepper
Celery schnitzel:
1 kg celeriac
4 tbsp wheat flour
1 tsp salt
0.5 tsp baking powder
1 teaspoon smoked paprika powder
100 ml plant milk
40 g cornstarch
100 g panko breadcrumbs
Cooking oil for frying
The preparation is simple:
For the pea dip:
Put the thawed peas, parsley, mint, lemon juice, olive oil, soy yoghurt, salt and pepper in a tall container and mix with a hand blender until you get a homogeneous cream.
Season again with salt, pepper and lemon juice, if you like.
Put aside.
For the celery schnitzel:
Peel the celeriac and cut into slices about 1 cm thick.
For the vegan egg substitute, mix wheat flour, salt, baking powder, paprika powder with plant milk in a deep plate.
Add cornstarch and panko breadcrumbs to each of two additional plates.
Dip celery slices first in cornstarch, then in egg replacer and finally in panko breadcrumbs.
Heat cooking oil in a pan.
Fry the escalopes in it on both sides for approx. 6-8 minutes until golden brown.
Remove, drain on kitchen paper and serve with pea dip.
Clean up!
