When the weather is wet and cold outside in winter, it feels good to be able to warm up from within, and what better way than a nice hot soup?

On the occasion of vegan January, also known as Veganuary, many people do without animal products - but not on taste.

You need the following ingredients for four portions of the warming Maultaschen soup in the Veganuary

For the Maultaschen dough:

  • 40g Easy To Mix Vegan Egg Powder


  • 200 g flour (type 405)


  • 200 g durum wheat semolina


  • 4 tbsp olive oil


  • 1 tsp salt

For the filling:

  • 100 g baby spinach leaves

  • 1 onion

  • 4 sprigs of fresh parsley

  • 1 package Easy To Mix Mince or Easy To Mix Meatball

  • 50 ml oat cream

  • 2 teaspoons medium hot mustard

  • 2 tbsp olive oil

  • 1 pinch of salt

  • 1 pinch of pepper 

  • 1 pinch nutmeg

  • 125ml water

  • 4 tablespoons flour

  • 6 tbsp sunflower oil

You will also need two liters of vegetable stock, a bunch of finely chopped parsley and a bunch of chives cut into fine rings.

Distribute the filling of the Maultaschen in the middle and always with a little distance over the entire length of the dough.

Preparation: This is how you make the vegan Maultaschen soup, which is warming in winter, yourself

  • Mix the Easy To Mix Vegan Egg Powder as directed on the packet.

    Then it is kneaded with the flour, the durum wheat semolina, the olive oil and the salt to form a smooth dough, which you then leave to rest in the fridge for half an hour.

  • For the filling of the Maultaschen you should wash the spinach and chop it finely.

    The onion is peeled and very finely chopped.

    The parsley also needs to be finely chopped.

    Combine ingredients in a bowl and add Easy To Mix Mince Powder or Easy To Mix Meatball Powder.

    The oat cream, mustard, olive oil, salt, pepper and nutmeg also go in before you add the water and mix the ingredients thoroughly.

    Finally, place the filling in the fridge to chill as well.

  • For the topping, peel, chop and dredge the onions in the flour.

    Heat the sunflower oil in a pan and fry the mealy onions in it.

    Then place the fried onion topping on a piece of kitchen roll to drain.

  • Take the Maultaschen dough out of the fridge and use a rolling pin to roll it out into a rectangle about eight millimeters thick.

    Distribute the filling in the middle and always with a little distance over the entire length of the dough.

    Then brush the top and bottom of the dough with water and fold the bottom over the filling.

    Finally, the upper part is placed on top.

    With a spatula you can press off the Maultaschen and cut them apart with a pastry wheel.

    However, make sure that the Maultaschen are really well closed.

  • Bring the vegetable broth to a boil in a large saucepan.

    Then turn down the temperature, put in the homemade vegan dumplings and cook them for about a quarter of an hour.

Sprinkle the onion topping, parsley and chives over the Maultaschen soup and enjoy hot.
