Super juicy apple cake (photo: Alon Mesika)
Apple pie is one of the defining signs of winter.
Along with the rain, the puddles and the arrangement of the closet for the cold season, there is an uncontrollable urge to enter the kitchen and put a soft and fragrant cake studded with apples, spiced with cinnamon, into the oven.
What makes this cake super juicy is the addition of applesauce to the batter.
Until you try, you won't understand.

Preparation
How do you make an apple pie?
1 Heat an oven to 170 degrees.
2 In a bowl, beat together the eggs and sugar until you get a foamy foam (about 4-5 minutes).
3 Add the oil, applesauce and cinnamon and mix until the ingredients are combined.
4 Add the flour into the mixture and avoid over-mixing which will cause the cake to be dense.
5 Using a spoon, mix the diced apples and cranberries into the cake batter and pour into a greased 26 cm diameter pan.
6 Bake for about 35 minutes in the oven or until a toothpick inserted into the center of the cake comes out dry with a few moist crumbs.
7 Cool and if desired, sprinkle powdered sugar on top.
Fills the house with the smell of winter.
