Surprisingly tasty!
Chicory is surprising in the truest sense of the word.
Not only because chicory is (in my opinion) a vastly underrated vegetable, but also because the
discovery of chicory
was more of an
accident
.
Before the dawn of the 19th century, a Belgian farmer discovered the mother plant chicory in a corner of his dark cellar, from which light-colored shoots sprout.
Today, chicory is the
Belgian national
vegetable .
It is assumed that chicory
was even more bitter
then than it is today because many bitter substances were bred out.
Bitter vegetables are always a double-edged sword: some love them, many hate them.
As I said before, I'm a
big fan of chicory
.
I am firmly convinced that I can also convince some chicory skeptics with this recipe, because the
creamy mustard-cream sauce
and the
hearty taste of the Kasseler
complement the flavor profile and make this recipe a real
surprise for the palate
.
That's how it's done:
You need these ingredients:
2 tbsp cooking oil
500 g chicory, halved
For the mustard cream sauce:
400 g Kasseler, diced
100 g onions, diced
1 tbsp flour
100 ml vegetable broth
100 ml whipping cream
2 tbsp sweet mustard
1 tablespoon grain mustard
0.5 tsp salt
0.5 tsp pepper
200 g tomatoes, diced
For garnish:
Tomatoes, diced (to taste)
chives (to taste)
The preparation is so easy:
Put the cooking oil in a pan and lightly roast the chicory in it until it is still al dente but slightly browned.
Take out and keep warm.
For the mustard cream sauce:
Fry the pork chops and onions in the same pan.
Sprinkle the flour evenly on top and stir well.
Deglaze with vegetable broth and cream.
Then add the sweet and grainy mustard and season with salt and pepper.
Finally add the tomatoes and mix to form a sauce.
Arrange the chicory on a plate and pour the sauce over it.
Tip
: Neutral components such as mashed potatoes are suitable as a side dish.
Garnish the chicory with fresh diced tomatoes and chives to taste.
