The small chocolate cakes with a liquid core have their origins in France and are referred to there as malheur, i.e. misfortune or misfortune.

That's what the chef must have thought when he first took an unbaked tartlet out of the oven and, out of necessity, served it to his guests.

The little misfortune quickly turned out to be a stroke of luck and a delicious dessert.

Because this chocolate lava cake is simply delicious to melt away.

That's how it's done:

You only need five main ingredients:

  • Lava Cakes:

  • 250 grams of butter

  • 250 g bittersweet couverture, chopped

  • 100 grams of sugar

  • 80 grams of wheat flour

  • 8 eggs

  • some sugar

  • some butter 

  • To taste:

  • powdered sugar

  • vanilla icecream

The preparation is simple:

  • Preheat the oven to 180°C for a circulating air.

  • For the Lava Cakes:

    Melt the butter, dark chocolate coating and sugar over a water bath and stir.

    Remove from the heat and let cool slightly.

    Sift the flour and stir in.

    Add the eggs one at a time and stir until a homogeneous mass is formed.

  • Grease a muffin tin with butter and sprinkle the wells with a little sugar.

    Fill the molds 2/3 full with the batter.

  • Bake in the preheated oven for 10 minutes - no longer!

    The shorter the baking time, the more liquid the core.

  • Dust the lava cakes with powdered sugar and serve immediately.

    Served with a scoop of vanilla ice cream.

    My personal tip

    , which I have already tested several times: Put the batter in small silicone muffin cases and put them in the freezer.

    Place the tartlets in the oven while frozen and simply bake for 2-3 minutes longer.

    This way you have Lava Cakes in stock in case guests suddenly turn up at the door or you feel like something sweet.
