The winter that has finally arrived and the rain that at a good time washes our little country, made me want chicken soup of course.
That's how it is, when the storm comes I have an uncontrollable need for it.
But this time it's not just a recipe for chicken soup, but with an indulgent side dish inspired by the curly-haired cook Rotem Liberzon, who prepares a stew of hedgehog meatballs with a stunning Persian sauce of herbs.
I thought to myself that it would work well on my little one, who, like me, is also addicted to chicken soup.
Please note, in
order for the balls to grow thorns, you must follow the cooking instructions and the use of basmati rice.

Chicken soup and hedgehog rice balls
Ingredients
For chicken and rice hedgehog meatballs:
1 finely grated carrot
1 finely grated zucchini
2 finely grated onions
1 crushed or finely grated garlic clove
500 grams of ground chicken
¾ package basmati rice (750 grams)
1 tablespoon of salt
For chicken soup:
2 chicken thighs cut in half
1 coarsely chopped onion or leek
2 coarsely chopped carrots
1 coarsely chopped parsley root
1 coarsely chopped celery root
250 g pumpkin cut into large cubes
1 parsley
1 Zorreshmir
2 stalks of celery leaves
½1 lemons
2 liters

black pepper

Preparation
How do you make chicken soup with hedgehog meatballs?

Prepare the soup:
cook all the chicken soup ingredients together until boiling, sprinkle with foam and continue cooking for another hour or until you taste and are sure you have a delicious soup.

Meanwhile, prepare the meat and rice balls:
mix all the ingredients for the balls in a bowl and mix well with your hands so that all the ingredients come together really well and do not fall apart during cooking.
Make 20 balls from the mixture.
Tighten them well and arrange them on a tray in one layer.
3 Assemble
the pot:
Pour half of the soup's liquid into a new, wide pot (like a saute), so that the level is about 10 cm - we will use the soup liquid to cook the rice urchins. If you want, add some vegetables that were cooked with the soup and shredded chicken pieces Alternatively, you can add additional carrots and zucchini cut into matchsticks like I did (see photo).
4 Add the "hedgehogs" to the pot with the soup.
If there are vegetables, place them between them and do not move them.
The soup should reach up to half the height of the balls.
If there is a lack of liquid in the pot, add more boiling broth.
Now the whole point is not to be tempted by what we cooks like to do the most - mix!
So don't mix okay.
If it's too strong for you and you really have to, shake the pot (Rotam Marsha).
5 Cook the balls at a moderate boil for 10 minutes.
Cover the pot and cook for another 40 minutes without daring to open it.
At the end it is allowed to open, and discover that you have hedgehog soup in the pot.
