Vegetable soup is a basic winter classic and everyone must have one winning recipe in their stash.
So how do you make a real vegetable soup rich in flavors, and of course without soup powder?

Tips for a rich vegetable soup:
* Do not give up the celery root and the parsley root, they provide important flavor.
I like to grate the celery root and half of the parsley root on a grater and cut the other half into cubes.
* It is highly recommended to burn the vegetables in oil first.
The taste is of great importance when you burn the vegetables and do not cook them directly in water.
* You might be surprised to find out that half a sweet green pepper gives a great flavor to the soup.

Ingredients
4 tablespoons of olive oil
1 chopped onion
1 leek cut into thin slices (only the bright part)
½ celery root grated on a grater
1 parsley root, half grated and half thinly sliced
1 sliced carrot
2 Zucchini sliced or cut into medium sized cubes
1 diced fennel
½ green pepper (uncut)
1 white cabbage cut into thin strips
½ bunch parsley or cilantro
½ Zorreshmir
½ chopped celery leaves, with the leaves
½ tablespoon of salt
1 teaspoon ground black pepper
1 teaspoon turmeric
1 teaspoon ground coriander seeds
3 tablespoons thin oats (optional), for qualification
1 frozen green custard apple (optional)

Preparation
How do you make a classic vegetable soup?
1 Heat the oil in a pot and add all the vegetables (except the vegetable and the pea if you choose to add it to the soup).
2 Add all the dry spices and fry while mixing the vegetables with the spices for about 6 minutes.
3 Pour water up to a height of 5 cm above the vegetables. Place the vegetables on top - the parsley, dill and celery and bring to a boil.
4 Lower the flame, add the oats if you choose to add them and cook for about 40 minutes partially covered.
Before serving, remove the green pepper and those who prefer the vegetable as well.
5 If you want to add peas, add them in the last minutes of cooking the soup.
