8 chicken thighs or halved legs
4 tablespoons of olive oil
2 cups Persian rice
400 grams crushed or chopped tomatoes (1 large box)
A handful of basil leaves
Salt
Ground black pepper

Preparation
How do you prepare chicken with rice, tomatoes and basil?
1 Season the chicken pieces with salt and pepper.
2 Heat a wide and flat pot (like a saute), pour the oil and brown the chicken parts on both sides, about 10 minutes.
Remove to a plate.
3 Add the rice and tomatoes to the same pot where the chicken remains and season with salt and pepper.
4 Pour 3 cups of boiling water, mix, taste the resulting liquid and make sure it is salty enough.
5 Return the chicken pieces, bring the contents of the pot to a boil, transfer to a low heat, cover and cook for half an hour or until the chicken pieces are cooked and soft.
6 Add basil leaves inside, cover for a few minutes so that their aroma will spread in the pot and serve.
Tip:
Before serving, it is recommended to put in an oven heated to 190 degrees for a heat stroke that brings out the pot especially brown and crunchy, and sprinkle some more fresh chopped basil leaves on top.
