The Tel Aviv sidewalk does not agree to reveal anything, the bright shoulder facing Rothschild Boulevard does not hint at anything about what is happening, and it goes without saying that the neutral stairs do not shout loudly while they climb up with you, but simply do their job, leading with justified self-confidence inside.



On any other day in the last decade you could easily walk past Rothschild 48 in Tel Aviv without being stopped.

But not today.

Because today (Thursday) we can announce the official end of the years of planning and renovations, potholes and potholes, and the opening of the doors of R48, the restaurant of Ruthie and Matti's dreams in Rodo.

The restaurant, one of two that will be operated in the luxury hotel Hotel & Garden R48 from R2M, is led by chef Ohad Solomon (in a relatively unusual move for the group, which has not placed its chefs at the front over the years), and was designated by the group to "break conventions" from its very first day.



As such, she offers only 9 tables (almost symmetrical to the 11 rooms in the hotel, although it is emphasized that she and her future partner will also be open to orders from outside, of course) and a very small space, which includes an open kitchen and an energetic bar scene, without harming the natural desire for blessed silence and intimacy.

Solomon's menu is described as "personal", "touching" and one that reflects his culinary travels around the world, but it does not exist in the conventional sense of printed pages, choices and a routine ordering ceremony.

Instead, you are expected to "relax, lean back in the chair and surrender to the experience".

Or in other words - a delicious meal, but different of course.



"I want everyone who eats here to leave satisfied," Solomon stated while continuing the line of breaking conventions, "not just bites, but also 'real food', which in my experience, you really want to eat at these types of meals."

"We wanted to serve the tastiest and most special food, without being committed to a concept"

The meal (NIS 500 per diner, including mineral and carbonated water) was built by Solomon without geographical commitment, without technical anchors, and in fact without definitions at all.

It starts with the same bites, but soon moves on to large snacks, unfolding and turning, releasing and swirling.



Thus, you can find here a Burmese street soup with hummus noodles, crab sticks that appeal to Europe, and also a Jerusalem artichoke that pairs well with peanut masala and cilantro chutney - all together finally make up his delicious, although currently also mysterious, journey.

"We wanted to serve the tastiest and most special food, without being committed to a certain concept," he explained, "the result is a meal that stops in Peru, Paris, and the East, and never stops moving."

The cocktail menu was built by mixologist Oral Levy, who works on his ingredients in the laboratory in the basement of the hotel.

It includes ten mixes that are of course designed to safely accompany the food, and can be adapted to specific dishes, or just like that.



At the same time, the wine menu of Ader Berdichevsky represents many years of bottle-treasures, and includes dozens of special options, exclusive imports, rare collectibles and also pours of at least 15 glasses.

The way to the restaurant goes through the hotel lobby, which is also expected to open for business soon.

The steps inside reveal the work of French designer Christian Liege, and the views outside highlight the labors of landscape architect Pete Udolf.

Everything else - including the costumes of the staff, the serving utensils and the pieces scattered around - complete what can only be defined as a complete Brodo experience.



"We built this meal the way we think it's right to eat," she concluded, "and the way we like to host at our house."



R48, inside R48 Hotel & Garden, Rothschild 48, Tel Aviv, will for now operate on Sunday-Friday evenings.
