German pancakes, French crepes, Austrian pancakes or British pancakes - different names, but mostly the same basic ingredients: flour, eggs and milk.

The batter is stirred together in no time and the pancakes are quickly baked in a pan.

What makes them so special that the whole world has its own recipe and the UK even has its own public holiday?

That's right: While we celebrate Shrove Tuesday in Germany today, Pancake Day is celebrated in England.

That's how it's done:

You only need a few ingredients:

  • Dough:

  • 3 eggs, separated

  • 300 grams of wheat flour

  • 300ml milk

  • 0.5 tsp salt

  • 0.5 tsp sugar

  • Filling:

  • cooked ham

  • spring onions, in rings

  • Cheddar or processed cheese

The preparation is simple:

  • separate eggs.

    Beat the egg whites with a pinch of salt until stiff.

    Put aside.

  • Mix wheat flour, milk, egg yolk, salt and sugar.

    Carefully fold in the egg whites.

  • Heat the oil in a small pan (approx. 20 cm in diameter).

    Pour in a ladleful of batter and spread to cover the entire surface of the pan.

    Place the ham, spring onions and cheese in the center of the pancake.

    Be sure to leave a 2cm border.

    Cover with another ladleful of batter.

  • Carefully turn the pancake over and fry on the other side until the batter is cooked.

    Remove and do the same with the rest of the dough.

  • Stack pancakes on a plate and serve with ketchup, if desired.

  • Relish!
