In the last decade, in fact, the already historic figure of the roaster has increasingly emerged, above all with the advent of

micro-roasteries, shops where quality coffee is at the centre.

The work of the roaster is meticulous, he works behind the scenes, tasting different types of coffee in order to select the best one, and then roast it: the roaster is at the same time the one who chooses, tastes and selects, constantly studying, and giving more voice to the skills techniques than words.

When we speak of

Specialty Coffee,

we never refer only to the final product, but to

an entire chain

made up of a multiplicity of different players, from coffee growers, to exporters and roasters, who make coffee better every day thanks to a more sustainable and equitable approach.

In Italy the phenomenon of micro roasting is growing like wildfire above all due to the ethical choice and values shared by this community supported by SCA Italy (https://www.scaitaly.coffee/), the Italian delegation of the Specialty Coffee Association whose mission lies not only in promoting quality coffee, but in spreading the culture and philosophy that lie behind each cup.

“There is a world made up of artisans and small roasters that must not only be preserved but enhanced, emphasizing less the big names and industries that often use unsustainable processes in the long coffee supply chain” says Davide Cobelli, coordinator of SCA Italy.

“ All changes and technological innovations should be combined with tradition to obtain a better product:
