Ochratoxin A: Health Importance and Where It Occurs
The International Agency for Research on Cancer classified ochratoxin A as a possible human carcinogen.
The fact that ochratoxin A is detected in blood plasma, blood and urine and can even occur in breast milk suggests that consumers are continuously exposed to ochratoxin A through plant and animal foods.
Ochratoxins are formed by typical storage fungi.
Ochratoxins are found worldwide and occur in a variety of plant and animal foods.
After a fungal infestation, they can be formed
mainly in various cereals such as
rice, barley, oats and wheat
, but also in many types of fruit and vegetables (e.g. in
grapes and figs ).
Also processed products like
Wine, fruit and vegetable juices and beer
can contain ochratoxins.
In addition, ochratoxins are found in
fruit spices
(mustard, pepper, paprika),
coffee, cocoa
and their processed products (e.g. in chocolate).
Occurrence of ochratoxins in
nuts
(pistachios, chestnuts),
tea, herbal supplements
and animal products (e.g. liver, kidney, ham) has also been reported.
