Apulian chef opens restaurant in Paris, now boasts a Michelin star

A talent with a respectable curriculum, already winner of the Bocuse d'Or Italy, he boasts international experiences in Germany, Austria, in Rome at Heinz Beck's La Pergola, Joel Robuchon's Atelier in Paris as well as the Ledoyen Pavillon.

And today his Michelin star was awarded on the occasion of the presentation of the Michelin France guide, today at the Palace of Music and Congresses in Strasbourg.



These are the reasons published in the "red": "In a brand new, welcoming and modern restaurant in a quiet street, Martino Ruggieri, former brilliant right-hand man of Yannick Alléno at the Pavillon Ledoyen, also Bocuse d'Or d'Italia 2019, entitled the his restaurant "Maison Ruggieri" to welcome us at his home. It offers two menus and a particularly attractive à la carte offer. It is also possible to order a dish, an ingredient or a recipe when reserving the table. Rejecting flashy and demonstrative, his delicate and subtle cooking immediately gets to work: exceptional ingredients at the service of superlative flavours, harmonious, sometimes disconcerting assemblages (like a plate of spinach, oysters and caviar) and tasty recipes,often enhanced by extracts (topped on rib eye steak, razor clams and smoked eel, for example) and mind-blowing sauces that are thoughtfully left on the table".



"In France - Ruggieri had said on the occasion of the victory of the Bocuse d'Or Italy, before the global dispute in Lyon - they don't reward the best, they reward those who tell something true".

And his truthful menu with Apulian roots in a few months of activity convinced the inspectors of the red guide who today awarded him the first, highly coveted, macaron for the restaurant he opened on his own, Maison Ruggieri. (ANSA).
