Ingredients

    • 125 grams of butter

    • 3 eggs

    • 110 grams of sugar (half a cup + a tablespoon)

    • 150 grams of flour (cup + spoon)

    • 5 grams of baking powder (half a bag)

    • 1 tablespoon honey

    • Pinch of salt

    • Lemon zest

Preparation

How do you make lemon madeleine cookies?

  • 1 Melt the butter in a pan and set aside to cool.

    If you want to achieve a buttery-nutty taste, continue heating until the butter gets a light brown color (be careful not to burn the butter).

  • 2 In a bowl, mix the rest of the ingredients well.

  • 3 Add the butter, mix to a smooth mass and transfer to a piping bag.

    Put the closed bag in the refrigerator for at least two hours (if you don't have a piping bag, leave the mixture in the bowl, cover tightly with a bag and transfer to the refrigerator).

  • 4 Before baking, heat the oven to 170 degrees.

    Grease a socket mold for Madeleine cookies and lightly flour it (if there are no Madeleine molds, you can bake in a mold for mini muffins).

  • 5 Remove the mixture from the refrigerator and pour into the madeleine molds up to 3/4 of the height of the sockets.

  • 6 Bake for about 12 minutes, until the cookies become golden.

    Prepare the coating:

    mix well the powdered sugar with the lemon juice - the more liquid the mixture, the thinner the coating will be.

  • 8 After removing the madeleine cookies from the mold, dip them in the lemon coating or drizzle over them when they are placed on a wire rack.
