In addition to soy drinks, almond drinks in particular have become increasingly popular as a milk substitute in recent years.

The drink has been known in Spanish and Sicilian cuisine for centuries.

In contrast to cow's and even grain milk, almond milk is gluten-free and also suitable for people with soy intolerance.

All of this contributes to the fact that the milk alternative made from almonds is on the verge of overtaking soy milk.

Almond milk is relatively expensive, but you can also enjoy it more cheaply by making it yourself.

The almonds to be used can be unpeeled or peeled.

The difference is noticeable in the price and taste: Shelled almonds are significantly more expensive, but they taste a little less bitter.

Since the nuts are soaked, you can of course also peel them, but this takes a lot of time, which experience has shown is not worth it in terms of taste.

The ingredients for about 70 milliliters of almond milk:

  • A cup of almonds

  • Three cups of water

  • Optionally, dates or other natural sweeteners can be added for sweetening.

This is the best way to proceed:

  • To prepare, soak the almonds in water overnight.

  • Drain the water and rinse the almonds well.

    During soaking, various substances are flushed out of the almonds, such as phytic acid, tannin, or enzyme inhibitors.

    The phytic acid probably inhibits the absorption of the minerals contained in almonds.

    In moderation, however, they are not particularly dramatic and anyone who would otherwise eat almonds raw can continue to use the soaking water.

  • Place the almonds in a blender with three cups of fresh water and blend on the highest setting for about two minutes.

    Depending on your taste, you can add a little sweetness and mix the milk again.

  • Now put a nut milk bag, a strainer or a fine cloth in a sieve and pour the milk through and collect it in a container.

    Squeeze out the residue that remains in the cloth so that all the liquid is squeezed out.

    The finished almond milk is best filled in a sterile bottle, which should be kept in the refrigerator.

    The milk will keep for two to three days.

    Since the almond milk settles very quickly, you should shake it well before drinking.

    Additional spices such as vanilla, cinnamon or cardamom give almond milk that extra pep.

    With a little cocoa, the plant drink becomes a delicious chocolate drink in an uncomplicated way.
