Linzer cookies are the little sisters of the famous Linzer tart that originates from the city of Linz in Austria.
The relatively low and crispy tart filled with jam was served in the courts of the Austrian aristocracy for decades.
Now you too can serve the small version of the tart to your guests on Passover and feel like true royalty.

Ingredients
For almond crispy dough
60 grams of soft butter
90 grams of powdered sugar (3/4 cup)
½ vanilla stick
1 egg
110 grams ground almonds (cup)
20 grams of coconut (about 5 tablespoons)
10 grams of cornflour (one tablespoon)
70 grams potato flour (about 3/4 cup)
400 grams of berry jam (or any other flavor you like)
Coconut and almond streusel
100 grams of sugar (half a cup)
100 grams of cold butter
1 vanilla stick
100 grams ground almonds (one cup)
100 grams of ground coconut (one cup)
170 grams potato flour (3/4 cup)

Preparation
How do you make Linzer cookies for Passover?
1 Heat an oven to 170 degrees.
2 Prepare the dough: cream the butter, vanilla and powdered sugar in a mixer with a guitar hook.
3 Add the egg until a uniform mixture is obtained.
4 Add all the other ingredients to the butter mixture while mixing slowly.
5 Using parchment or a spatula, spread the mixture on a baking sheet lined with baking paper and bake for about 10 minutes.
6 Refrigerate and spread the berry jam on top.
7 Call the streusel coconut and almonds: mix all the ingredients in a mixer with a guitar hook until a crumbly mixture is obtained.
8 Spread an even layer over the jam.
9 Return to the oven and bake for about 30 minutes (at 170 degrees).
10 Refrigerate and sprinkle powdered sugar.
11 Cut into squares and serve.
