One of the biggest advantages of canned vegetables over fresh vegetables is their long shelf life.
While fresh vegetables spoil quickly if you don't freeze them, canned ones last a comparatively long time.

For the same reason, overheating canned vegetables while cooking is not recommended.
When cooking, nutrients are lost.

So just warming canned vegetables a little before eating them is fine, and if the power goes out during a blackout, you can eat the contents of most canned goods uncooked.
