How often is white cabbage on your menu?
If I take care of myself, then actually never.
But it also has more practical reasons, since I live alone and such a head of cabbage always gives quite a lot ๐ .
At home with my parents, cabbage was mainly in the form of hearty cabbage rolls (we say cabbage rolls) or sauerkraut.
Both very tasty!
The fact that you can also cook a curry from the healthy winter vegetables is new to her and also to me.
But the result can be seen and, above all, tasted.
Try it yourself.
That's how it's done:
You need the following ingredients:
2 tbsp cooking oil
150 grams of onions
200 grams of carrots
100 grams of apples
500 g white cabbage
1.5 tsp salt
2 tbsp curry powder
0.5 tsp pepper
100 g dried fruit (e.g. raisins, prunes and apricots)
400 ml coconut milk
200 ml vegetable broth
Aside from that:
Roasted almonds, chopped
Rice as a side dish
The preparation is very easy:
Peel, halve and slice the onions.
Clean, peel and slice the carrots.
Wash the apple, cut in half, remove the core and cut into small cubes.
Wash cabbage, remove outer leaves and finely slice.
Heat cooking oil in a saucepan.
Fry the onions, carrots and apple for 3 minutes.
Season with salt, curry powder and pepper and sautรฉ the spices briefly.
Add cabbage and chopped dried fruit.
Deglaze with vegetable broth and coconut milk.
Simmer over low heat until vegetables are tender and sauce has thickened, about 20 minutes.
Serve cabbage curry with rice and chopped almonds.
