Each vegetable has the optimal preparation method that gets the most out of it.

This recipe brings crazy flavors and textures out of the humble sweet potato, perhaps one of the most popular vegetables in the country: the edges are crispy and caramelized, and the inside is soft as silk.

In the following recipe, we make sure to scrub the skin of the sweet potato, so they are definitely edible.

Ingredients

    • 5-6 medium sized sweet potatoes

    • Dry oregano

    • Coarse salt

    • Ground black pepper

Preparation

How do you make a perfect roasted sweet potato?

  • 1 Heat the oven to 220 degrees.

  • 2 Scrub the skin of the sweet potatoes with scotch tape and soap and rinse thoroughly with water.

    Place on a cutting board and cut lengthwise.

  • 3 Put half of the olive oil in a pan with baking paper and sprinkle the salt, oregano and pepper.

  • 4 Place the sweet potatoes, cut side down, on the pan.

    Shake the sweet potatoes in the pan so that the olive oil caresses the entire surface of the sweet potato.

    Drizzle over more olive oil and send to the oven for 35-40 minutes, until the sweet potatoes are completely baked, very soft and the outside is slightly burnt.

  • 5 Remove from the oven, let them cool a little and serve, together with yogurt, raw tahini, green sachug or pesto that you like.
