We closed the corner (and the craving) of the salty braai matzah (you know, the one that puts the smell of frying in the air long before Passover itself) right now with the help of chef Itamar Cohen from "Cafe Gan Sefer", who also added an effective and good recipe for egg salad and tzatziki along the way.
We closed, and opened a new one.
Sweet of course.

Matza Brai, a little different
because the pre-picnic which is something fried with colorful bowls next to it is great, but it won't end until the ultimate closure.
Or in other words - sweet matzah brai, with whatever you want to pour on top.

Ingredients
10 matzah soaked in water, lightly squeezed
1 glass of milk
½ sweet sour cream
5 eggs
4 bags of vanilla sugar
Butter or canola oil, for frying

Preparation
How do you make sweet matzah brai?
1 Beat the eggs in a large bowl.
Add the milk, cream and vanilla sugar and mix until a uniform mixture is obtained
2 Break the matzah inside, and mix until you reach a relatively uniform mass
3 Heat a medium pan with the butter or oil over high heat.
Using a spoon or ladle, place "scoops" of the desired size, and fry until browned.
Remove to absorbent paper.
If desired, sprinkle with a mixture of sugar and cinnamon.
Arrange on a plate with any side dish of your choice.
Serve hot
