Ingredients:

For a 24-26 cm diameter pan



for the basbosa:


2 eggs


200 grams (1 cup) sugar


240 ml (1 cup) fine olive oil or normal neutral oil


2 cups matzah flour


1 bag of baking powder


240 ml (1 cup) Orange juice


Grated peel from 2 oranges


1 cup chopped almonds/pecans (and a few more whole for decoration)



For the syrup:


200 grams (1 cup) sugar


2 cups orange juice


Orange peels


1 teaspoon Zahar water

Preparation:

1. Heat the oven to 170 degrees.

The syrup:

cook the syrup ingredients for 3-5 minutes until a thick syrup is obtained.

Refrigerators.

The basbosa:

beat or whisk eggs, sugar and oil by hand until a puffy and light mixture is obtained.



4. Mix the matzah flour and baking powder and add to the egg mixture alternately along with the chopped nuts and orange juice.

Mix only until the ingredients are incorporated.



5. Pour the batter into a lightly greased pan, decorate with walnuts or almonds and bake for 30 minutes or until a toothpick inserted into the cake comes out dry.



6. While the cake is still warm, pierce it in several places or cut it into cubes/diamonds and pour the syrup over it until it is all absorbed.



7. Allow the cake to cool completely before serving.
