  • 200g cheddar, grated

  • 1 tsp sweet paprika powder

  • Chives, to taste

The preparation is really simple:

  • For the topping:

    Heat the olive oil in a pan and sauté the onions until translucent.

    Season with salt and pepper.

    Add the pretzel pieces and fry until the onions and pretzel pieces are lightly browned.

    Put aside.

  • For the beer and cheese soup:

    Heat the olive oil in a saucepan and briefly sauté the garlic until fragrant.

    Deglaze with beer, broth and cream.

    Boil.

  • Reduce the heat and add the Emmental and Cheddar.

    Heat, stirring, until cheese is completely melted.

    Flavor with paprika powder.

  • Divide the soup into bowls and serve garnished with a pretzel and onion topping and chives.
