175 g green asparagus (peeled 125 g)
2-3 spring onions (30 g in total, cleaned)
2-3 sprigs of flat-leaf parsley (5 g leaves)
4 tsp olive oil (20 ml)
3 eggs (size M)
1 pinch of salt
1 pinch freshly ground black pepper
2 tablespoons sparkling mineral water
1-2 pinches of chilli flakes
The preparation of the asparagus omelet from the Doc Esser is so easy and quick
Peel the lower third of the asparagus, cut off the woody ends, wash and cut into 3-4 cm pieces.
Also halve particularly thick sticks lengthwise.
Clean the spring onions, cut the white and green parts into rings separately.
Rinse the parsley, pat dry and chop.
Heat the oil in a pan over medium-high and fry the asparagus for 4-5 minutes, turning frequently.
Meanwhile, mix the eggs with a little salt and pepper and add the mineral water.
Add the white spring onion rings to the asparagus and fry for 1 minute.
Reduce the heat, pour the egg mixture over the asparagus mixture and spread evenly by tossing the pan.
Put the lid on and let set for 4-5 minutes.
Slide the omelette onto a plate, sprinkle with green spring onion rings, parsley and chilli flakes and serve immediately.
