  • 175 g green asparagus (peeled 125 g)

  • 2-3 spring onions (30 g in total, cleaned)

  • 2-3 sprigs of flat-leaf parsley (5 g leaves)

  • 4 tsp olive oil (20 ml)

  • 3 eggs (size M)

  • 1 pinch of salt

  • 1 pinch freshly ground black pepper

  • 2 tablespoons sparkling mineral water

  • 1-2 pinches of chilli flakes

The preparation of the asparagus omelet from the Doc Esser is so easy and quick

  • Peel the lower third of the asparagus, cut off the woody ends, wash and cut into 3-4 cm pieces.

    Also halve particularly thick sticks lengthwise.

  • Clean the spring onions, cut the white and green parts into rings separately.

    Rinse the parsley, pat dry and chop.

  • Heat the oil in a pan over medium-high and fry the asparagus for 4-5 minutes, turning frequently.

  • Meanwhile, mix the eggs with a little salt and pepper and add the mineral water.

  • Add the white spring onion rings to the asparagus and fry for 1 minute.

    Reduce the heat, pour the egg mixture over the asparagus mixture and spread evenly by tossing the pan.

    Put the lid on and let set for 4-5 minutes.

  • Slide the omelette onto a plate, sprinkle with green spring onion rings, parsley and chilli flakes and serve immediately.
